Konnichiwa Japan!

Yay! Today is the big day. We’re off to the Land of the Rising Sun.

After five months of booking plane tickets and hotels, researching and reading a ton of material, and having finalized an itinerary jam-packed with lots activities, the day has finally arrived.

Yes, we’re finally leaving today for Japan. All those months and months of preparation, deciphering the the train and subway maze, and learning how to count or say a few words. It’s so exciting!

Is it cold yet?

Well, winter is just around the corner. Try as I might, I guess those shorts, summer shirts and flip-flops have to go back in the closet. Cranking up the heat in the house doesn’t cut it either when you want to curl up on the couch while reading a book.

Fine. I succumb to the cold. But not without a couple of my favourite things for fall and winter.

It’s the classic Hermès Avalon blanket designed with the “H” monogram in two-tone gray and red accents.

I love how the edges are hand-rolled and finished off with a red wool thread sewn by hand.

The blanket is made in Scotland using the finest wool and cashmere. Them Scots know a thing or two about spinning and weaving wool.

And it’s reversible too! Light gray on one side and dark gray on the other.

It’s certainly making me feel all warm and cozy already. Now all I need is a cup of steaming hot chocolate.

Oh yes! I almost forgot. I did say a couple of favourites, right?

Apple Dumplings

I received a few requests for the recipe for Apple Dumplings from this last post so I’m making a separate post for this. This dessert is so good, not to mention they’re very easy and quick to make. This recipe is taken directly from The America’s Test Kitchen – Family Baking Cookbook. You can purchase this cookbook directly from the Cooks Illustrated website.

This recipe uses refrigerated crescent dinner rolls as the pastry that wraps around the apples. We prefer Pillsbury’s Refrigerated Crescent Dinner Rolls, but any 8-ounce can of crescent dinner roll will work. Folding and rolling the dough ensures that the seams will not break open during baking. Serve with vanilla ice cream or a drizzle of heavy cream.


Ingredients

1 (8-ounce) can refrigerated crescent dinner rolls
2 small Granny Smith apples, peeled, cored, and halved crosswise
2 tablespoons unsalted butter, cut into 4 pieces
1/2 cup packed (3 1/2 ounces) plus 2 teaspoons light brown sugar
1/4 teaspoon ground cinnamon
1 cup apple cider

Instructions

1. Adjust an oven rack to the middle position and heat the oven to 350 degrees. Line a largerimmed baking sheet with parchment paper.

2. On a lightly floured counter, carefully unroll the entire can of dough, keeping the perforations intact. Following the photos, cut the dough into four 6 by 3-1/2 inch rectangles (do not tear the diagonal perforations). Fold each rectangle in half and roll out to a 6-inch square.

3. Place an apple half, cut side down, in the center of each dough square and place a piece of butter in the center of each apple. Toss 2 teaspoons of brown sugar with the cinnamon and sprinkle over the apples. Pull the edges of the dough up over the apple, twisting the dough ends to form a knot at the top.

4. Transfer the dumplings to the prepared baking sheet and bake until the crust is golden brown and the apples are tender but not mushy, 20 to 25 minutes, rotating the baking sheet halfway through baking.

5. While the dumplings bake, simmer the apple cider and remaining 1/2 cup brown sugar together in a small saucepan over medium-low heat until the sauce is slightly thickened and measures 1/2 cup, about 15 minutes.

6. Immediately transfer the baked dumplings to individual serving plates or shallow bowls. Pour 2 tablespoons of the cider sauce over each dumpling and serve.
